The Argentinian asador is usually a metal or stainless steel structure, designed specifically for grilling meat, and generally consists of the following elements:

  • The grill, where the meat is placed for cooking.
  • The brazier, space under the grill where the fire is lit to generate the embers necessary for cooking the meat. It can be fed with charcoal, wood or a combination of both, which gives the meat a very characteristic smoky flavour.

It is used to cook a wide variety of meat cuts, such as asado, chorizo, morcilla, vacío, entraña, among others, and is considered a central element in family and social gatherings and celebrations in Argentina.
